Keema




Ingredient


* 1/2 kilo mince beef
* 1/2 tsp salt (according to taste)
* 1/4 tsp haldi powder
* 1/4 tsp ginger paste
* 1/2 tsp garlic paste
* 1/2 tsp red chili powder
* 3-4 whole dried red chilies
* 4-5 black pepper
* 4-5 cloves
* 1 bari illaichi
* 2 tbs yogurt
* 1 medium tomato chopped
* 1 medium onion chopped
* 3 tbs oil
* Fresh dhunia leaves and
* green chilies for garnish


Method :

Heat the oil in a pan and saute the onion till light brown.
Add the spices along with the garlic and ginger paste. Mix well.
Add the mince beef and stir till the spices have mixed well with
it and its water has dried. Add 1 glass of water to it and leave
on medium heat to tenderize. When half done add the yogurt and
tomatoes. Cook till all the water has dried. Mix well.
Garnish with chopped fresh dhunia and chopped green chilies.

BEEF TIKKA




Ingredient

* 1/2 kilo cubes of beef
* 2 tbs unripe papaya (grinded)
* 1/2 tsp ginger paste
* 1/2 tsp garlic paste
* Salt according to taste
* 2 tbs yogurt
* 1 tsp chili powder or 3-4 chilies


Method

Mix together all the spices and yogurt and papaya
and coat the beef cubes with it.
Leave to marinate for 5-6 hours preferably overnight.
Then barbeque over charcoal.

NEHARI




Ingredient :


1. 2 1/2 lbs goat meat
2. 1 Cup oil
3. 5 Cardamoms
4. 5 Cloves
5. 3-tbs ginger paste
6. 3-tbs garlic paste
7. 2/3 cup curd
8. 1 1/2 cup onions (cut)
9. 2-pcs Cinnamon each of 1 inch
10. 2 Bay leaves
11. 1/2 tsp turmeric powder
12. 2 tsp coriander powder
13. 1 tsp red chilies powder
14. salt as per taste
15. 2 tsp flour
16. 2 tsp gram flour
17. 1 tsp garam masala
18. 1/2 tsp green cardamom and nut meg powder


Method :

* Slice onions thinly.
* Heat half of the oil in a pan and put half of the onion.
* Make the onion red and then put the meat, rest of the onions,
cloves, bay leaf, cinnamon and cardamoms.
* When the water of meat dries then, add coriander, red chilies,
salt, and turmeric powder.
* Now add garlic and ginger paste and cook well till it separates
from the oil.
* Now put curd and after it dries put approximately 3 cups water.
* When the meat is cooked and tender, take it out of the curry.
* Heat the oil in a separate pan and cook flour and gram flour
in it.
* Remove from heat. After cooling it a little add the prepared
strained gravy in it.
* After mixing well add the meat and cook with garam masala,
cardamoms and nutmeg powder.
* After cooking for 8-10 mins when you feel the gravy is sufficient
ly thick turn off the heat.
* Garnish with fresh thinly sliced green chilies,
ginger and cardamom leaves.
* Serve with Nan.

CHEDDER BEEF




Ingredient :


*
22 oz. Beef
*
16 oz.Cheddar cheese
*
8 oz. can water chestnuts, drained and chopped
*
1/4 cup chopped green onion
*
3/4teaspoon onion powder
*
1/2 teaspoon hot red pepper sauce
*
1/4teaspoon salt
*
1 Loaf unsliced Italian bread


Method :

COMBINE Beef, 1 1/2 cups Cheddar cheese, water chestnuts,
green onion, onion powder, pepper sauce and salt in large bowl.
Slice bread three times vertically and approximately every 1 1/2
inches horizontally to within 1/4' of bottom crust.
Bread will have a 'checkerboard' appearance.
STUFF all cuts in bread with Creamed Chipped Beef mixture.
Wrap bread in aluminum foil, keeping top exposed.
Sprinkle remaining cheese on top of stuffed bread.
BAKE in preheated 400 °F. oven for 35 to 40 minutes or until bread
is browned and crispy.
*DEFROST Creamed Chipped Beef in microwave on 50% power
for 5 to 6 minutes. Makes 10 to 12 servings

BAKED BEEF RAVIOLI WITH CHEESE





Ingredient


* 9-oz) Beef
* 5-oz. Marinara Sauce
* 4 ounces mozzarella cheese, cut into 1/2-inch cubes
* 1/2cup fresh breadcrumbs
* one tablespoon olive oil



Method

PREHEAT oven to 400deg F. Lightly grease 8-inch-square baking dish.

COMBINE hot pasta, sauce and cheese; spoon into prepared baking dish.
Combine breadcrumbs and oil in small bowl; sprinkle over
pasta mixture. Cover.

BAKE for 20 minutes. Uncover; bake for an additional 5 minutes.

BEHARI KABAB




Ingredient

* One kg. undercut
* 60 grs. garlic
* 100 grs. raw papaya
* 120 grs. cooking oil
* 60 grs ginger
* 10 grs. red chili pa
* 10 grs. garam masala

(whole hot spices and salt to taste)


Method :


Cut the meat into thin slices and flatten them with a flat knife.
Grind ginger, garlic and raw papaya into fine paste.
Grind the hot spices and mix with paste and cooking oil and
rub meat well with it.
Put it in a refrigerator for 8 hours for marinating meat.
Put the meat on skewers and barbeque over charcoal fire.

Beef Roast




Ingredient :


* Beef - 2 kg (one whole piece)
* Vinegar - 4 tsp
* Ginger - 6 tsp (crushed)
* Black pepper - 1 tsp
* Juice of 4 lemons
* Dalda Oil - 4 tsp
* Salt to taste


Method :

Trim all fat from beef and rinse it thoroughly.
Add vinegar, ginger, black pepper,
lemon juice and salt and mix well.
Prick with a fork from all sides and set aside for two hours.
Put in a large pan, cover with water and let it cook for 3-4 hrs,
on medium heat. When water begins to dry,
pour oil on it and stir a little, cook until beef is tender.
It should only need about 20-30 minutes.
